John Connolly of Hazel Mountain Chocolate produces what’s described as ‘bean to bar’ chocolate in the Burren Mountains.

The business is described as one of the smallest and most remote chocolate factories in the world.

They make chocolate in very small batches using direct traded rare Trinitario, Criollo cacao beans and raw cane sugar for dark chocolate and Irish milk from grass-fed cows.

During the Galway Food Festival (March 29 – April 02), he’s running ‘lock ins’ at his Galway store and he particularly busy ahead of Easter.
