Taste of the Week – Aztec Corn Chowder

On this week’s episode of Taste Of The Week, Alan morrissey welcomed Jacques Brennan on to the show. Jacques is the owner of the Vegan Factory and Shop in O’Briensbridge and is also the author of Hungry Soul.

This week, Jacques prepared a delicious Aztec Corn Chowder.

INGREDIENTS:
– 1 medium pnion, finely chopped
– 3 cloves of garlic, chopped
– 2 small potatoes, washed and cubed
– 2 to 3 cups kernels (off the cob if you can get it)
– 3 to 4 cups of water
– 1 tsp ground cumin
– 1/2 tsp chilli flakes
– 1/4 tsp ground black pepper
– 2 to 3 tbsp of Original Hungry Soul cream cheese
– Sea salt
– Juice of 1/2 lemon

GARNISH:
– Chopped cherry tomato
– Red chilli
– Cilantro

INSTRUCTIONS:
– Soften the onion and the garlic in a large pot
– Into the same pot add the spices and the potato and warm together for a minute
– Add the water, bring to the boil then simmer until potato is cooked
– Add the corn kernels and cook for a minute or two
– Blend until it is has a smooth texture
– Finish with the Hungry Soul cream cheese and lemon juice
– Serve hot with garnish on top

Perfect for people who are lactose intolerant, who are vegan, want something gluten free or if they just want to eat something really tasty.
