When the Covid pandemic descended on Ireland in March 2020, the country was plunged into months of fear and uncertainty.
As the virus took hold, businesses were forced to curtail their operations or close altogether. Some even closed their doors permanently, never to reopen.
In the midst of this upheaval some people took the brave step of starting a new business. Holly Butler was one of those.
She and her then partner (now husband) Jon worked at The Ritz in London considered to be one of the greatest hotels in the world.
Holly and Jon moved from The Ritz to the equally well known and impressive Adare Manor in Co Limerick. When the global pandemic hit, even hotels had to eventually close their doors.
However, in the midst of the chaos, a new door was opening for Holly and Jon and they decided to take the plunge.
Holly and Jon’s months of hard work finally brought them to their big day, March 5th 2021, when they would finally open what they’ve called Holly’s Café, located on O’Curry Street in Kilkee.
