Cass McCarthy
Cass McCarthy grew up by Clovelly beach in Sydney’s Eastern Suburbs.
In 2013 she completed a livestock apprenticeship at Stone Barns Centre for Food & Agriculture in New York State and has worked in organic agriculture since; managing various livestock operations and working as a market gardener selling seasonal produce at farmers markets and to chefs.
Cass is a wholefoods cook with a keen interest in seasonality, nose-to-tail eating, fermentation and slow food. She is also a qualified nutritionist, having completed a degree in food science and nutrition at La Trobe University in Melbourne.
She met her husband Nick in Byron Bay in Australia where he worked as an engineer. Nick had planned to return to Ireland but put that on hold after meeting Cass.
In December 2021, they moved from Byron Bay to Quin in County Clare, where Nick is originally from.
While the pandemic delayed their plans to return to Ireland, they were able to plan their new business while still in Australia.
Today they run Lúnasa Farm which is certified organic through the Irish Organic Association. The McCarthys also operate a butchery and a retail unit.
Cass is a farmer, nutritionist and co-owner of Lúnasa Farm and Butchery.
