I took a trip out to Lisdoonvarna to the Roadside Tavern this week to chat, cook and indulge.
In Kieran's Kitchen I got to cook their signature dish with chef Viv – wild hot smoked salmon. I chatted to Peter Curtin about the importance of locally sourced produce from lettuce to Burren Beef – to their micro-brewery Burren Brewery and of course Kieran himself to find pick up a few secrets.
I did have a very big confession to make to Kieran and Viv – I don't eat fish! But with all the wonderful ingredients and getting to cook the dish I took the 'plunge' and ate my first bit of fish …… my mammy would be proud.
The salmon had been hot smoked the day before at the Burren Smoke House. The mash was infused with spring onion and it was served up with a cream, whole grain mustard and spinach reduction.
